Effect of Storage of Skim Milk Powder, Nonfat Dry Milk and Milk Protein Concentrate on Functional Properties

چکیده
The physicochemical changes during the storage of high protein powders, such as skim milk powder (SMP), nonfat dry (NDM), and concentrates (MPC), can result in a variation functional properties powders. objective this study was to evaluate effects various powders (SMP, NDM, MPC40, MPC70) on their properties. Three different lots were collected from US manufacturers analyzed for after 3, 9, 15 months at 25 °C. Additionally, also evaluated seasonal functionality SMP NDM. Functional properties, solubility, emulsification ability index (EAI), foaming, surface hydrophobicity (SHI), each time point. solubility MPC70 foam overrun SMP, decreased significantly (p < 0.05) with an increase time. higher than other Except drainage, there no effect season NDM has impact some proper selection based end-use is recommended.
